Tips for Baking Cinnamon Rolls From Scratch
The first thing you want to do for cinnamon rolls (if you are working with yeast dough) is to get your yeast dough ready. After the dough rises, unroll it onto a surface that you've covered lightly with flour. Now flatten the dough by hand and mold it into a rectangle.
Next you're going to use a rolling pin to roll the dough into a bigger rectangle (roughly 12 by 20 inches). Make sure to keep adding enough flour to the pin and surface so that the dough doesn't stick. Take your softened butter and apply it to evenly on the dough. Keep a one-inch section along one of the longer sides of the rectangle butter-free. Dust the butter evenly with cinnamon sugar (don't hold back too much on this). Of course, you can add other spices to your taste. Once again, leave out the one inch strip at the end from this process. |
You can add any fillings you want at this point, like nuts and raisins. Spread them out over the dough. Now it's time to roll up the dough that you've covered with butter, cinnamon sugar, and whatever other toppings you wanted. Start on the side of the dough opposite the side with the one-inch reserved strip. Bring the edge of the dough up and begin rolling. Keep things tight as you roll the dough up and create your cinnamon roll log.
When you reach the other end of the dough and your cinnamon roll log is almost complete, put a little water on that one inch part to help seal that edge and complete your log.
Now take your knife or other pastry cutting tool (even floss can work effectively) and cut the log into equal-sized pieces according to your preferences.
Prepare a cookie sheet or baking pan by oiling it or lining it with parchment, then place your cinnamon rolls on it. Place a damp cloth over the rolls and wait for them to roughly double in size, which should take about an hour.
Preheat your oven to 375 degrees fahrenheit and begin baking your cinnamon rolls. If the tops of the cinnamon rolls start browning too fast, you can cover the pan with foil. Starting at 30 minutes you can test to see if they are done. Use a fork to peel up a roll near the center. If the bottom seems too sticky or doughy, they need more time (probably around 10 more minutes). You want them cooked through and nice and brown on top.
Take the pan out when the rolls are baked enough and set them out to cool for about 15 minutes. After that, you can begin topping them with icing (you don't want to do this too early or when the cinnamon rolls are too hot).
