How to Make an Avocado Grilled Cheese
Here's a recipe for a chorizo and avocado grilled cheese. It's got scrambled eggs, avocado, chorizo, Muenster cheese, and white cheddar cheese. You can also swap out the chorizo for pretty much anything, like bacon or vegetarian options. Pretty amazing, and we're going to walk you through it.

Sandwich ingredients:
- Muenster cheese (2 slices)
- white bread (2 slices, thick cut)
- chorizo (third of a cup)
- sliced avocado (half of an avocado)
- white cheddar cheese (2 slices, sharp)
- salted butter (half tablespoon)
First you're going to make the scrambled eggs with cheese. Get your ingredients gathered together to start with. Get a small bowl and crack the eggs into it. Add a few dashes of hot sauce and whisk it aggressively until the mixture is smooth.
Get your nonstick pan and heat it up to medium heat. Add the butter to the pan and wait for it to start bubbling. Once that happens, add in your whisked egg mixture. As the eggs cook, keep stirring until the eggs start to come together and stiffen.
Now add in the cheddar cheese (from the ingredients for the scrambled eggs) and use a spatula to get the cheese under the eggs. Let the cheese cook like this for about a minute. After that, mix the cheese in with the scrambled eggs and take the pan off the heat.
Take a separate frying pan, heat it up on high, then add the chorizo. Stir intermittently as the chorizo cooks, waiting until the chorizo has browned and is crispy. Remove the pan from the stove as well.
On one of the bread slices, place your two slices of Muenster cheese. On top of that, add the scrambled eggs, cooked chorizo, 2 slices of cheddar cheese, and avocado slices. Place the second slice of bread on top and butter the outside of the sandwich.
Get another frying pan heated to medium heat and add the sandwich. You want to get both sides of the sandwich cooked until the outside is nicely browned and the cheese on the inside is melted. Remove from heat, this grilled cheese is ready!
Another great variation on the grilled cheese sandwich involves avocado and sriracha. The ingredients you'll need are:
- Gouda cheese (3 ounces)
- Salted butter (2 tablespoons)
- Bread of your choice (2 slices)
- One boiled egg
- Half an avocado, sliced
- Sriracha, to taste
Make sure you first have your boiled egg ready and already cooked. You're going to crumble the egg and place in a bowl until you are ready to use on your sandwich (next step). Take one piece of your bread and pile on in order: half your gouda cheese, along with all your sliced avocado, the egg which you crumbled, a bit of sriracha, the rest of the gouda, and the other slice of bread. Your sandwich is now formed.
Take your butter and spread it on the outside of both pieces of bread. Now place the sandwich in a skillet or frying pan and heat until the cheese has melted completely and the outside is nicely browned.
Let it cool a bit, then serve.
