Mango Mai Tai and Rum Runner
The mai tai is a rum drink at the top of the list of cocktails for tropical relaxation and this mango mai tai is no exception. Particularly delicious is the use of fresh mangos rather than mango nectar. You'll want to have these ingredients on hand for the mango mai tai:
- aged rum (1.5 ounces) - orange liqueur (half ounce) - fresh mango, cubed (half a cup, about half a mango) - pineapple juice (quarter ounce) - orgeat syrup (quarter ounce) - lime juice, freshly squeezed (half ounce) - mango slices (garnish) - mint (garnish) |
Muddle the orgeat syrup and mango together in a cocktail shaker until the mango is sufficiently juiced. Now add the pineapple juice, lime juice, orange liqueur, and rum to the cocktail shaker and fill it up with ice. Shake shake shake for about half a minute.
Have a cocktail glass with ice on hand and strain the cocktail shaker into it. In fact, you'll want to use crushed ice if at all possible, which is traditional for the mai tai and makes it particularly refreshing. Garnish the mai tai with the mint sprig and mango slices.
You can use aged rum or spiced rum depending on your preferences. If you're looking to up the spice factor even further, you can take a few slices of jalapeno pepper and put it in with the mango and orgeat when you are muddling those ingredients.
If you can't get your hands on orgeat syrup - which has almond flavoring as well as a taste of orange flower water - you can substitute in amaretto liqueur or almond syrup.
Another fruity rum drink you can try is the rum runner. The rum runner hails all the way back to the 1950s in a Florida tiki bar, which may not surprise you as far as cocktail drink origins go. The rum runner has a lot of variations, but typically you'll get rum, grenadine (always a great cocktail addition), along with blackberry and banana liqueur. Here are the ingredients you'll need for one variation on this delicious rum drink:
- dark rum (1 ounce)
- light rum (1 ounce)
- banana liqueur (1 ounce)
- blackberry liqueur (half ounce)
- pineapple juice (1 ounce)
- grenadine (splash)
- fruit for garnish
Make sure you have a cocktail shaker. Fill it with ice, then add all the rum runner ingredients. Shake everything up thoroughly, then strain into a cocktail glass filled with ice. Use your selected fruit to garnish and your rum runner is ready to go!
You can, of course, make this cocktail blended by using a blender instead of a cocktail shaker. Pour the ingredients into a blender and use about three quarters of a cup of ice, blending until everything is nice and smooth.
If that's still not doing it for you, here is another rum runner variation using orange juice. Use:
- rum (1.5 ounces)
- blackberry brandy (half an ounce)
- crème de banana (half an ounce)
- orange juice (3 ounces)
- grenadine or falernum (dash)
Follow the same instructions as before with the rum runner, mixing either with cocktail shaker or blending.
