Burger with Blue Cheese
Burgers are a really versatile , and in recent years chefs and restaurants have dared to get quite fancy with their ingredients. However you prefer your burger, we think you'll agree these two burger recipes for a Blue and Black Burger (burger with blue cheese) and Chipotle Nacho Burger sound delicious. Blue and Black Burgers
These char-grilled burgers have a tasty surprise inside: luscious blue cheese. Brushing the buttery brioche buns with a basil-infused oil before toasting makes this a summer winner.

2 tablespoons olive oil
2 tablespoons chopped fresh basil leaves
4 brioche hamburger buns, split
1 1/4 pounds ground beef chuck
4 ounces blue cheese, divided into four 1-inch chunks
3/4 teaspoon salt
1 tablespoon coarsely ground black pepper
4 thin slices sweet onion
Each Serving: About 745 calories, 40g protein, 39g carbohydrate, 47g total fat (17g saturated), 2g fiber, 190mg cholesterol, 1,235mg sodium
Tip: For this recipe, choose a premium blue cheese like Stilton or Gorgonzola.

4 ounces blue cheese, divided into four 1-inch chunks

- Prepare outdoor grill for direct grilling over medium heat.
- In cup, combine oil and basil; brush oil on 1 cut side of each bun. Set buns aside.
- Hold one-fourth of ground beef in hand; press chunk of blue cheese into center, then lightly press meat around cheese to enclose completely. Patty will be about 1 1/2 inches thick. Repeat with remaining ground beef and blue cheese. Sprinkle salt and pepper on both sides of patties.
- Place patties on hot grill rack; cook 14 to 16 minutes for medium, or until desired doneness is reached, turning over once.
- About 2 minutes before burgers are done, add buns, cut sides down, to grill rack. Grill just until toasted. Place burgers on buns and top with onion slices.

1/4 teaspoon salt

- In large bowl, combine ground beef, chipotle pepper, and salt until blended, but do not overmix. Shape beef mixture into four 3 1/2-inch patties, handling meat as little as possible.
- Lightly spray ridged grill pan or 12-inch skillet with nonstick cooking spray and heat over medium heat until hot.
- Place patties in hot grill pan. For medium, cook 6 minutes, and then turn burgers over to cook 3 minutes. Top each burger with 1 slice cheese; cook 2 to 3 minutes or until cheese melts.
- Serve burgers on buns and top with salsa.
