How to Make a Skillet Cookie Pie
Whatever you want to call it, this is basically a large cookie or cookie/pie cooked in a skillet that is delicious on every level. You can even adjust what you cook it in based on your preferences, like a deep dish pizza pan instead of a skillet.
Here are the ingredients you'll need:
- melted unsalted butter (6 tablespoons)
- one large egg
- all purpose flour (2/3 cup)
- brown sugar (packed, 1/3 cup)
- granulated sugar (1/3 cup)
- vanilla ice cream (1 cup)
- baking powder (eighth teaspoon)
- baking soda (quarter teaspoon)
- vanilla extract (1 teaspoon)
- chocolate chips (half cup)
- chocolate sauce (2 tablespoons)
- salt (quarter teaspoon)
Preheat your oven to 350 degrees. Now take your (8 inch) iron skillet, grease it, and line it with parchment paper. Take a bowl and add the baking soda, baking powder, flour, and salt. Whisk everything to get it blended and set the bowl aside for the moment.
In a different bowl, add the brown sugar, granulated sugar, and melted butter. Again, whisk to mix everything thoroughly. Now whisk in your large egg and the vanilla extract and continue to whisk so that everything is no thoroughly combined. Add the flour and stir until it is also mixed in completely. Fold the chocolate chips in as well. You now have your dough.
Add the dough to the skillet or whichever type of pan you've prepared spread it out evenly. You're going to bake in the oven now for 20 to 25 minutes so that it becomes light brown and firms up in the middle. Now remove the skillet and place on a rack to cool. Add the chocolate sauce and ice cream.
As an alternative skillet dessert, here is a recipe for a skillet snickerdoodle cookie. The ingredients you'll need are:
- unsalted butter (2 sticks, room temp)
- granulated sugar (1/3 cup)
- all purpose flour (2.5 cups)
- large eggs (2)
- cornstarch (quarter cup)
- baking powder (2.5 teaspoons)
- vanilla extract (1.5 teaspoons)
- salt (quarter teaspoon)
For the cinnamon sugar:
- granulated sugar (3 tablespoons)
- cinnamon (2 teaspoons)
For the egg wash:
- water (1 tablespoon)
- egg white (1)
