Herb Roasted Chicken and Beer Can Chicken
This is a recipe for roast chicken that uses a delicious rub flavored with herb, lemon, and butter. It is hard to go wrong with roast chicken as the basis for a delicious meal, and this is a particularly tasty way to prepare it.
Here are the ingredients you'll need: - a four to five pound chicken (roasting chicken) - lemon juice (2 tablespoons) - single small onion cut into quarters - large celery (cut in chunks) - fresh parsley (several sprigs) - fresh parsley (3 tablespoons, chopped) - unsalted butter (4 tablespoons) - rosemary (quarter teaspoon) - thyme (half teaspoon) - kosher salt - cracked black pepper |
Pull your ingredients together and preheat the oven to 350 degrees. You're going to rub the inside of the roasting chicken with your lemon juice. Add salt and pepper to the chicken. Now add the celery, onions, and a few parsley sprigs to the inside of the chicken.
Take a small bowl and mix together the rosemary and thyme, along with the parsley and your butter (you'll want to make sure it's melted). Now take a pastry brush or other dedicated brush, and brush some of the butter mixture over the chicken.
Get a roasting pan and put the chicken in the pan. You'll want to roast the chicken for about an hour and half, but keep a close eye on it. Throughout the cook time you'll use a baster to baste the chicken with your butter mixture.
Here is another option for chicken, the beer can chicken. Typically this is something you'd do outside on the grill, but this is a version you can do anytime in your oven.
Here are the ingredients you'll need:
- whole chicken (four to five pounds)
- beer (6 ounces)
- Worcestershire sauce (4 tablespoons)
- packed brown sugar (2 teaspoons)
- paprika (2 teaspoons)
- cayenne pepper (quarter teaspoon)
- ground cumin (quarter teaspoon)
- garlic powder (half teaspoon)
- onion powder (1 teaspoon)
- dried thyme (1 teaspoon)
- dried sage (half teaspoon)
- kosher salt (1 teaspoon)
Get the ingredients together, with everything properly measured. Take the inner parts out of the chicken, if not done already. Let the chicken sit at room temp for about half an hour.
Now preheat your oven to 350 degrees. Take a roasting pan (shallow) and line it with tinfoil. Take a regular can of beer and pour out about half. Use the pointed end of a can opener and punch about 5 holes near the top of the beer can.
Take a medium mixing bowl and add the thyme, paprika, onion powder, garlic powder, cumin, brown sugar, sage, cayenne pepper, salt. Take a whisk and whisk all of these seasonings until everything is mixed together.
Season the inside of the chicken with some of the kosher salt. Rub the outside of the chicken with the Worcestershire sauce and your mix of spices.
You're going to place the beer can in the foil-covered roasting pan. You're going to then place the chicken with cavity facing down and post it on the beer can.
Now it's time to roast. Roast the chicken/beer can for about 1 hour 45 minutes to 2 hours. When it's done, take everything out of the oven and let it cool for about 20 minutes. Remove the beer can and prep/carve the chicken for serving. You're done!
