Burger with Swiss Cheese, Mushrooms, and Onions
A burger with mushrooms, carmalized onions, and swiss cheese is a delicious classic that we're going to go through below. It's a doable burger to make, but will make you feel like a burger master when you are through with cooking it. The recipe also walks you through how to make a truffle aioli to put on it.
The ingredients you'll need for the burgers are: - burger buns (4, preferably brioche) - burger patties (4 3-ounce patties) - shredded Swiss cheese (1 cup) - butter (5 tablespoons) - small onion (one, sliced thinly) - sliced mushrooms (2 cups) - dried thyme (half teaspoon) - Worcestershire sauce (1 teaspoon) - ground black pepper (1 teaspoon) - salt (2 teaspoons) |
And the ingredients you'll need for the aioli are:
- truffle oil (half teaspoon)
- mayonnaise (half cup)
- lemon juice (1 teaspoon)
- clove of garlic (1)
- ground black pepper (half teaspoon)
- salt (1 teaspoon)
You're going to start with the mushrooms and onions. Use a saute pan, put your stovetop on medium high heat, and put the pan over the heat. Add a teaspoon of the salt, all of the sliced onion, and 3 tablespoons of the butter. Now saute for around 5 minutes as you stir constantly. You're looking for the onion to become a little browned and softened.
Now move the onions to one side of the saute pan. Add the mushrooms and saute them for around 3 minutes, until they are browned and softened. The onions will continue to soften during this time.
Add in the dried thyme and Worcestershire sauce. Stir in together and saute everything for another minute. Take the pan off the stovetop and put to the side.
Next, you'll want to use a cast iron pan and put it on medium high heat, adding the 2 tablespoons of butter you have left over. When the butter melts, place the brioche hamburger buns in, with the inside of the buns facing down into the pan. Cook until the hamburger buns are golden brown. Given the size of the pan, you'll need to do one or two hamburger buns at a time.
Season the burger patties with 1 teaspoon of salt and all of the ground pepper. The cast iron pan should still be at medium high heat. You're going to cook the burgers for about 5 minutes per side. This should get your to medium doneness, so if you're looking for the burgers to be more done you'll want to cook a little longer on each side.
As the burgers are cooking, it's time to turn to the the truffle aioli preparation. Take a small bowl and, from the aioli ingredients list, add the truffle oil, mayonnaise, lemon juice, and salt and pepper. Whisk everything together. Make sure the garlic you have is minced very finely and whisk it in with the rest of the ingredients.
Add some of the shredded Swiss cheese to the top of the burgers during the last minute or two of cooking. Top the burgers with the sauteed onions and mushrooms, then the rest of the shredded cheese. Cook for the final minute or two, ideally with the top on the cast iron skillet.
Add the aioli mixture you recently whisked together to the buns, then add the burger which now has the cheese, onions, and mushroom on it. Your burger is ready!
