Guide for Making Oreo Cheesecake

- oreo cookies (1.5 cups)
- cream cheese (32 ounces)
- granulated sugar (1.25 cups)
- heavy whipping cream (third of a cup)
- vanilla extract (teaspoon)
For the glaze:
- heavy whipping cream (1 cup)
- semisweet chocolate chips (1 cup)
- vanilla extract (teaspoon)
For the vanilla cream:
- granulated sugar (quarter cup)
- container of sour cream (16 ounces)
- vanilla extract (teaspoon)
Oreo garnish:
- 3 oreos
To make the crust, combine the butter, cookie crumbs, and quarter cup of sugar in a big bowl. Wrap a nine inch springform pan in foil then press your butter/crumb/sugar mix into the bottom. Put in the fridge for about half an hour (until it firms up) and preheat your oven to 425 degrees.
Take another large bowl, put in your cream cheese, and mix with an electric mixer until it is smooth. Add the sugar (1.25 cups) and flour, and continue beating until everything is smoothly mixed.
Next, take your eggs and egg yolks and beat them into the mix as well. Now, stir in the heavy cream and teaspoon of vanilla extract. After everything is well mixed, pour half of this into your crust. Sprinkle the crushed oreos on top. Now pour the other half of the batter on top of the oreo layer you just laid down. Smooth with spatula.
Place in the oven and bake for about 15 minutes at 425 degrees. Reduce the oven temp to 225 degrees and bake for around 50 more minutes. If things are getting brown too quickly you can cover the cheesecake with foil. Remove from the oven and raise the oven temp to 350 degrees.
Now in another large bowl and mix together a quarter cup of sugar, sour cream, and vanilla extract. This is your cream layer, which you're going to spread now over the rest of your cheesecake. Bake this at 350 degrees for around 8 minutes. Take the cheesecake out of the oven and set it aside to cool for a few minutes. Then cover your cheesecake with plastic wrap and place in the fridge to chill overnight or for a few hours.
Now on to the fudge glaze. You're going to add the heavy cream to a saucepan and put on high heat until it scalds. Now add the vanilla extract and chocolate. Stir for about a minute. Take the saucepan off the stove. Stir as the chocolate melts. Put this glaze in the fridge for 10 minutes.
Put your cheesecake on a large plate and remove the springform pan. Pour the fudge glaze over the cheesecake. Garnish by sticking the halves of your remaining oreo cookies on top. Refrigerate until you are ready to eat.
